A scrumptious, nourishing breakfast that will keep you grounded for the day.
An easy to cook, light, nourishing and easy to digest; Good for babies first meal and the elderly.
Ingredients;
2-3 tbsp Ghee, 1-2 tbsp raw sugar, 1/2-1tsp ground cardamom, 1tsp of Cinnamon, 1/2 cup organic course semolina, 1-2 cups boiling water, 2tbsp sultanas/raisins, 2-4 dates, 2-3 tbsp goji berries.
Method;
Choose a heavy based pan and dry roast the semolina, string over a medium heat until there is no more moisture and the grains become aromatic ( you can do this with the whole bag of semolina at once and store it after cooling to save time each morning)
Heat the ghee in a pan and then add the roasted semolina. Continue to stir slowly over a low-medium heat until the grains turn into a golden colour.
Now add the boiling water carefully as it will spit a bit and stir quickly to avoid lumps forming.
Add soaked sultanas/raisins, dates and goji berries, stir and leave, covered, off the heat for 5 minutes.
Finally add the cardamom, cinnamon and sugar, stir over a low heat until the mixture is smooth and beginning to come away from the sides of the pan. Serve into two bowls and enjoy warm.
